Mac and JackCasserole

Four kinds of cheese plus peppers make a tasty version

 Ingredients

·

· 4 oz Monterey Jack cheese (shredded)

· 4 oz cheddar cheese (shredded)

· 12 oz cottage cheese

· 8 oz sour cream

· 1/4 cup Parmesan cheese (grated)

· 4 fresh jalapeno peppers (2 diced; 2 sliced),(sliced for garnish)

· half of a fresh green bell pepper (diced);

· half of a fresh red bell pepper (diced)

· half of a fresh large white onion (diced)

· salt (as desired)

· pepper (as desired)

· paprika (as desired)

· 1 cup bread crumbs

· 1/4 cup butter (melted)

Method

Preheat oven to 350 degrees F.Boil elbow macaroni in a large pot of water until tender; drain. Stir togethercooked macaroni, shredded cheeses, cottage cheese, sour cream, Parmesan cheese,diced vegetables, salt, pepper, and paprika. Place in a 9-x-13-inch casseroledish or baking dish. Mix together bread crumbs and melted butter and sprinkleover macaroni. Place reserved jalapeno slices evenly on top of bread crumbs.Place dish on middle oven rack. Bake 30 to 35 minutes, until bread crumbs aregolden brown.



Notes: Place 14 briquettes on lid and 10 underneath.

StrawberryFrench Toast Breakfast Casserole

 

Altered for Dutch oven

Ingredients

· 1/8 cup butter, melted

· 1 12.4 oz cansrefrigerated cinnamon rolls with cream cheese icing

· 3 eggs

· 1/4 cup heavy whippingcream

· 1 tablespoons vanilla

· 1/2 cup pecans chopped

· 1/2 cup halved freshstrawberries

· 1/2 cup strawberry syrup

 

Method

Preheat oven to 375degrees. Pour melted butter into an un-greased Dutch Oven.Separate cans of cinnamon rolls into 16 rolls and set cream cheese icing aside.Cut each roll into 8 slices and place slices on top of butter in baking dish.In a medium mixing bowl, beat eggs on medium speed for 2 minutes. Beat in creamand vanilla then pour mixture over rolls and butter. Sprinkle with pecans andstrawberries. Drizzle strawberry syrup over pecans and strawberries. Bake 20-25minutes or until golden brown, then cool 5 minutes. Meanwhile, remove coversfrom cream cheese icing and place icing in microwave for 5 seconds. Stir andmicrowave 5 more seconds or until thin enough to drizzle. Drizzle icing overtop of Strawberry French Toast Breakfast Squares. Cut into 12 squares andserve.

 

Notes:

In this breakfast dishyou have the warm, sweet satifying comfort of the French toast, combined withthe freshness of summer strawberries. The pecans add a delicious crunch to theFrench toast and fresh fruit

Place 15 briquettes on lid and 11 underneath.

Dutch Oven Caramel ApplePie

A cast iron, Dutch oven is key to this sweet, grilled dessert. Justplace briquettes on and under the pan to bake the apples and bread. Top withcaramel flavored icing.

Ingredients:

Rhodes Any Time Cinnamon Rolls, thawed but still cold

Granny Smith Apples, peeled and diced

½ cup

Brown Sugar

1 tsp

Cinnamon

½ cup

Graham Cracker Crumbs

¼ cup

Chopped Pecans

Caramel Icing:

Packets Cream Cheese Frosting Included With Rolls

Directions:

Cut each roll into 4 pieces and arrange in a 14 inch Dutch ovenlined with foil or sprayed with nonstick cooking spray. In a bowl, combineapples, brown sugar, cinnamon, cracker crumbs and pecans. Sprinkle mixtureevenly over cut rolls. Cover and bake, at 350 degrees, for 25-30 minutes. Forthe icing, combine cream cheese frosting with caramel topping. Drizzle over piewhile still warm. Dutch oven temperature control using briquets: to heat ovento 350 degrees place 18 briquets on top and 10 on the bottom.

 Easy"Peachy" Cake

yellow cake mix

1/3

cup vegetable oil

3

eggs

1

(30 oz.) can sliced peaches

 

In a large mixing bowl mix together cake mix, eggs, vegetable oil and syrup from peaches until smooth (about 2 mniutes). Pour batter into a buttered 12" Dutch oven. Arrange peach slices over top of batter. Cover oven and bake using 8-10 briquettes bottom and 14-16 briquettes top for 60 minutes or until top center of cake springs back when touched.

Serve topped with whipped cream.

ChocolateLovers Delight

1 1/2

cup water

1

(10 oz.) bag miniature marshmallows

1/4

cup cocoa powder

1

chocolate cake mix; prepared as directed

1

cup light brown sugar

6

oz. semi-sweet chocolate chips

 

Line the bottom and sides of a 12" Dutch oven with heavy foil. Mix the water, cocoa powder, and brown sugar together and pour into the Dutch oven. Add marshmallows and spread them out evenly. Pour prepared chocolate cake mix over marshmallows. Sprinkle chocolate chips over cake batter.

Cover oven and bake using 8-10 briquettes bottom and 14-16 briquettes top for 60 minutes.

Serve warm with whipped cream.

Serves: 10-12
